Grilled Potato Skins

We tried these the other night with our grilled chicken, and I thought they were fabulous! :)

Ingredients:
2 large baking potatoes
2 tablespoons melted butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded cheese
3 bacon strips, cooked and crumbled
2 green onions, chopped,
Sour cream

Directions:
1. Cut each potato into quarters, lengthwise.
2. Cut away the white portion, leaving 1/4" or so on the skin.
3. Place skins on a microwave safe plate, and microwave for 8-10 minutes or until tender.
4. Combine the butter, salt and pepper. Brush over both sides of the potato skin.
5. Grill potatoes, skin side up, over direct medium-heat for 2-3 minutes.
6. Turn potatoes and position over indirect heat for 2-3 minutes.
7. Top with cheese, grill 2-3 more minutes or until cheese is melted.
8. Top with bacon and onions.
9. Serve with sour cream.
