This felt decadent for a mid-week meal. :)
Ingredients:
8-oz small shelled pasta
2 cups broccoli florets
1 pound chicken breasts
6-oz cream cheese, softened
1 cup shredded cheddar cheese
3/4 cup milk
Salt
Pepper
Garlic & Herb Seasoning
1 tsp olive oil
Directions:
1. Cook pasta according to package directions. Add broccoli during the last 3 minutes of cooking time.
2. While pasta is cooking, thinly slice the chicken breasts. Season with salt, pepper, and garlic & herb seasoning. Cook until juices run clear.
3. Drain pasta and broccoli. Toss with olive oil. Set aside.
4. In pasta saucepan, combine cream cheese, milk, 1 tablespoon garlic & herb seasoning, 1 teaspoon salt, and 1 teaspoon pepper. Stir often. As cream cheese begins to melt, add 1/2 cup of shredded cheddar cheese.
5. Once cheese sauce is melted, add pasta, broccoli and chicken. Heat through.
6. Serve hot, adding additional shredded cheese to each bowl for serving.
